Morphology

Parts of the wheat plant can be described as follows:

Root


Wheat has a fibrous root or root in hair, that is, with numerous branches, which reach most a depth of 25 cm, reaching some of them up to a meter deep.

Stem

The wheat stem is a hollow reed with six knots that stretch toward the top, reaching between 0.5 to 2 meters high, little branched.

Sheets

Wheat leaves are linear-lanceolate shape (elongated, straight, pointed) with sheath, ligule and auricles well defined.

Inflorescence

The inflorescence is a spike composed of a rachis (stepped shaft) or central stem short internodes, which are arranged on 20-30 spikelets alternately and lax or compact, each carrying a nine flowers, most of which abort, surrounded by glumes, glumillas or bracts, or glomélulas lodicules.

Grain

Grains are caryopsis showing oval shape with rounded ends. The germ excels in one of them and the other is a strand of fine hair. The rest of the grain, called the endosperm, is a storehouse of food for the embryo, which represents 82% of grain weight. Along the ventral surface of the grain is a depression (groove): invagination of the aleurone and all covers. At the bottom of the groove is a highly vascular pigmented area. The pericarp and testa, aleurone layer together with, make up the bran. The wheat grain contains a portion of the protein called gluten. The gluten yeast facilitates the development of high quality, which are needed in the bakery.
