The mayonnaise or mayonnaise is an
emulsified sauce cold drawn mainly consisting of whole
egg and vegetable oil shakes. It is generally seasoned
with salt, lemon juice, vinegar (or both). This is a
sauce of Spanish culinary kindred with aioli. Today it
is used in a variety of international dishes as an
accompaniment, as a rule of vegetables and fish. Their
origin has been disputed since the early scholars of the
twentieth century. Today is still done by hand, with a
mixer, and not the mortar-in Spain, Italy and France,
but in the Western world consumption of this sauce is
mainly of industrial origin [2] and is mainly associated
with fast food. |
