The main component of the
cauliflower is water and is a low calorie food because
it has a low content of carbohydrates, proteins and fats.
However it is considered a good source of dietary fiber,
vitamin B6, folic acid, Vitamin B5, and small amounts of
other B group vitamins (like B1, B2 and B3) and minerals
(especially potassium and phosphorus) .
Cauliflower has diuretic properties due to their high
water content and low dietary potassium and sodium. The
consumption of this vegetable helps to eliminate excess
body fluids and is beneficial in case of hypertension,
fluid retention and oliguria (low urine production). The
increased production of urine can eliminate, in addition
to liquid waste substances dissolved in it as uric acid,
urea, etc. It is therefore recommended also to
hyperuricemia and gout sufferers and people with a
tendency to form kidney stones.
